Ingredients for 8 servings:
- 500 g pumpkin flesh, e.g. butternut or 500 g carrots
- 500 g onion(s)
- 500 g apples
- 50 g olive oil
- 3 tbsp herb vinegar
- 3 cloves garlic
- 1 tsp liquid honey
- 1 tsp mustard
- Salt
- pepper
- curry powder

Pour the vinegar into a large bowl. Peel the apples and grate them with a julienne grater. Dip them in the vinegar as quickly as possible and mix. Peel the onion, halve it, and cut it into thin strips. Add it to the apples and stir. Peel the pumpkin flesh and/or carrots and grate them with a julienne grater. Mix everything together. Peel the garlic and grate it very finely. Make a vinaigrette with olive oil, honey, mustard, grated garlic, salt, pepper, and curry powder. Add it to the salad and mix everything well. Cover and let it marinate overnight in the refrigerator.
