Ingredients for 1 servings:
- 1 large apple or 2 small ones
- 220 g flour
- 1 packet of baking powder
- 2 tbsp cornstarch
- 1 pinch of salt
- 70 g white sugar
- 70 g brown cane sugar
- 150 ml oil
- 2 tsp, heaped cinnamon powder
- 250 g yogurt
- 2 eggs
- Paper baking cups or grease for the mold
- n. B. Icing sugar for dusting
- 150 g flour
- 75 g butter
- 30 g brown cane sugar
- 45 g white sugar
- 1 pinch of salt
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes
Either fill a 12-hole muffin tin with paper baking cups or grease it with oil or butter. For the crumble, melt the butter or melt it in the microwave, add it to a bowl with the flour, sugar, and salt, and knead into crumbles either by hand or with the dough hook of a hand mixer. Set aside. For the batter, first wash, peel, and finely grate 1 large or 2 small apples. In a bowl, mix the flour with the baking powder and cornstarch and sift through. Set both aside. In another bowl, mix the yogurt, oil, sugar, a pinch of salt, and 2 teaspoons of cinnamon. Then add the two eggs one at a time and mix well. Finally, carefully fold in the flour mixture and the grated apple. Carefully pour the batter into the cases and cover the tops completely with the crumbles (press down lightly). Preheat the oven to 180°C, then place the muffins in the oven. After about 5 minutes, reduce the temperature (approx. 160°C), then bake for another 20-25 minutes (check with a toothpick). About 5 minutes before the end of the baking time, dust everything with a little powdered sugar and finish baking.
