Apple Cinnamon Soup

Ingredients for 4 servings:

  • 300 g apples
  • 2 onions
  • 35 g brown sugar
  • 60 ml vinegar (apple cider vinegar), high-quality
  • 600 ml vegetable stock
  • 200 ml apple juice, naturally cloudy
  • 1 stalk(s) cinnamon
  • salt and pepper
  • butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel, quarter, and core the apples. For the garnish, cut about 100g of them into thin wedges. Peel the onions. Dice the onions and remaining apples. Add 1 tablespoon of butter to a saucepan and melt the brown sugar. Caramelize the apple and onion cubes and deglaze with vinegar. Pour in the soup and apple juice, then add the cinnamon stick. Simmer the soup for about 15 minutes. Then puree and strain. Finally, season with salt and pepper. Serve garnished with apple slices.
