Ingredients for 4 servings:

  • 400 ml whipped cream
  • 1 egg(s)
  • 1 egg yolk
  • 1 packet of vanilla sugar
  • 1 vanilla pod(s)
  • 1 tsp cinnamon powder
  • 50 g sugar
  • 2 apples

Working time approx. 10 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 15 minutes; Total time approx. 6 hours 25 minutes

Cut the apples into approximately 0.5 cm cubes. Whisk one whole egg and one egg yolk. Place the sugar, vanilla sugar, and apples in a saucepan and cook over high heat, stirring constantly, until lightly caramelized. Add the cream, cinnamon, vanilla bean pulp, and the remaining vanilla pod to the saucepan and bring to a boil. Once boiling, remove from the heat and whisk in the eggs. Bring back to a boil briefly, then let cool. When the liquid is lukewarm, transfer to a bowl and freeze for about 5-6 hours, stirring every hour to prevent ice crystals from forming.
