Apple-Citrus Chutney

Ingredients for 1 servings:

  • 1 kg apples, sour
  • 7 oranges
  • 350 g onion(s)
  • 60 g ginger
  • 500 g sugar
  • 250 ml vinegar (honey vinegar or mild white wine vinegar)
  • 2 lemon(s), organic
  • 2 tsp salt
  • 1 tsp pepper, Tasmanian

Peel, core, and finely dice the apples. Mix the apple cubes with the sugar and salt and let stand for at least 1 hour to draw in the water. Fillet the oranges, reserving the juice, and then cut the fillets into thirds. Peel the onions and ginger and finely dice them. Finely grate the lemon zest and then squeeze the lemons. Add all the prepared ingredients and the vinegar and bring the chutney to a boil. Then reduce slowly over low heat. Important: Stir frequently, as it could burn, especially towards the end of the cooking time. Finely chop the Tasmanian peppercorn with a knife and add it at the end. Season to taste with salt and/or sugar. While still hot, pour into twist-off jars and seal immediately. The chutney goes well with cheese and game.
