Ingredients for 1 servings:

  • 12 apples, sour
  • 250 ml apple juice
  • 300 ml water
  • 100 g sugar
  • 2 bags of vanilla sugar
  • ½ tsp cinnamon

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the apples, remove the cores, and roughly chop the flesh. Place the apple pieces in a saucepan with the apple juice, vanilla sugar, cinnamon, and half the sugar and bring to a boil. Cook for 10 minutes over medium-high heat, then simmer for 15 minutes on low heat. Stir occasionally, especially at the beginning. If there is no more liquid at the bottom of the pan, add a little more water until it is all used up. Mash any soft apple pieces. Taste the compote and add the remaining sugar—more or less depending on your taste and the acidity of the apples. Stir well. If the compote is too thick, add a little more water; if it is too runny, simmer a little longer. Serve warm or, once cooled, store in an airtight container.
