For the dough, knead all the ingredients into crumbles. Brush a roasting pan (a deep baking tray from the oven) with butter and flour or line it with baking paper. Spread two-thirds of the crumbles on the roasting pan and press them down firmly. For the filling, peel and quarter the apples and slice or grate them into thin slices and mix with a little lemon juice. Then spread them evenly on the dough. Whisk the cream, sugar, eggs, vanilla sugar and cinnamon with a hand mixer for about one minute. Spread the glaze evenly over the apples.
