Apple cream soup with curry

Ingredients for 4 servings:

  • 4 large apples
  • 2 shallots
  • 1 piece(s) of ginger root (approx. 2 cm)
  • 1 garlic clove(s)
  • 2 tbsp butter
  • 3 tbsp curry powder
  • 1 liter chicken broth
  • salt and pepper
  • nutmeg
  • lemon juice
  • Chives or green chili pepper, finely chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

without cream

Quarter, peel, and core the apples. Sauté them in hot butter with finely diced shallots, grated ginger, and the crushed garlic clove. Sprinkle with curry powder and stir until everything is coated with a yellow film. Add the broth. Bring to a boil, cover, and simmer for about 15 minutes, until the apples have broken down. Purée the soup and season with salt, pepper, nutmeg, and a few drops of lemon juice. Serve sprinkled with chives or green chilies.
