- 30 g butter
- 75 g sugar
- 2 eggs
- 1 pinch of salt
- n. B. Lemon juice, organic
- 250 g flour
- ½ pack of dry yeast
- 250 g low-fat curd cheese
- 1 apple
- 400 ml oil for frying
- n. B. cinnamon sugar

In a large bowl, beat the butter and sugar with the whisk attachment of a mixer until fluffy. Then, whisk in the two eggs one at a time, add a pinch of salt, and while continuing to beat, slowly mix in the lemon juice. In another bowl, combine the flour and yeast and add to the prepared dough along with the low-fat quark. Knead everything into a smooth dough using the dough hook of a mixer. Cover the dough and let it rise in a warm place for about 40 minutes. Shortly before the time is up, add the oil to a saucepan and heat to an ideal temperature of 160-180 degrees Celsius. Peel and core the apple, and cut it into small pieces. Add the apple pieces to the risen dough and fold in. Using two tablespoons, scoop out portions of the dough, carefully drop them into the hot oil, and fry for about 7-10 minutes until golden brown. Remove the baked apple fritters from the oil with a slotted spoon and place them on kitchen paper to drain. Finally, roll in the sugar-cinnamon mixture and serve warm or cooled. This makes about 20 doughnuts.
