Apple lattice cake

Ingredients for 12 servings:

  • 300 g flour
  • 200 g butter
  • 175 g sugar
  • 1 egg(s)
  • 1 lemon(s), grated peel
  • 1 kg apples, sour
  • 1 lemon(s), the juice
  • 50 g raisins
  • 50 g sugar
  • 1 tsp cinnamon
  • 2 eggs
  • 3 tbsp milk
  • 1 tbsp sugar
  • 1 tbsp pudding powder, vanilla

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Make a shortcrust pastry from the ingredients for the dough, cover, and let rest in the refrigerator for 2 hours. Peel, quarter, and core the apples, then thinly slice them, and toss with the lemon juice, sugar, and cinnamon. Roll out the pastry and line the bottom and sides of a greased springform pan. Reserve some dough for the lattice and cut it into thin strips. Prick the pastry base several times with a fork. Arrange the apples on top. For the icing, mix the eggs with the milk, sugar, and custard powder and pour over the apples. Arrange the pastry strips in a lattice pattern over the apples (instead of the lattice, you can also cut out different shapes and decorate the cake with them). Bake the cake for about 50-60 minutes in an oven preheated to 200°C (400°F).
