Apple marzipan cookies

Ingredients for 1 servings:

  • 75 g sugar
  • 125 g butter, soft
  • 1 packet of vanilla sugar
  • 1 egg white
  • 250 g wheat flour
  • 1 tbsp, leveled baking powder
  • 200 g apples, peeled and grated
  • 100 g marzipan, cut into small cubes
  • 1 packet of vanilla sugar
  • 50 g almond flakes
  • 50 g raisins
  • 3 tbsp rum
  • ½ tsp cinnamon powder
  • 1 egg yolk
  • 1 tbsp milk
  • possibly powdered sugar, for dusting

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 57 minutes

Baked apple cookies

Make a shortcrust pastry from the dough ingredients and form it into a log approximately 3 cm in diameter. Wrap it in parchment paper and refrigerate it for about half an hour. Mix the ingredients for the apple mixture together. Remove the dough log from the refrigerator and cut it into 60 slices. Place these on two baking sheets lined with parchment paper. Mix the egg yolk with 1 tablespoon of milk and brush the dough slices with it. Place a little less than a teaspoon of apple mixture on each slice. Then bake the whole thing in a preheated oven at 180°C (top/bottom heat) or 160°C (convection oven) for about 12-15 minutes. But be careful! At the end of the baking time, the cookies will quickly turn from “very delicious, light brown” to “black.” If you like, you can dust the cookies with powdered sugar after they have cooled.
