Apple marzipan waffles

Ingredients for 1 servings:

  • 6 eggs
  • 50 g sugar (castor sugar)
  • 250 g butter
  • 100 g marzipan paste
  • 500 g wheat flour
  • ½ pack of baking powder
  • 1 large apple (Boskoop)
  • 1 tsp, leveled cinnamon powder
  • 500 ml buttermilk

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Peel the apple, remove the core, and cut the fruit into small (really small!) pieces. Beat the eggs for 5-10 minutes until fluffy. Meanwhile, heat the butter and marzipan mixture in the microwave for 2 minutes at 700 watts, then whisk to combine. Mix the sugar into the eggs. Sift the flour and baking powder together with the buttermilk in a large bowl. Stir in the marzipan-butter mixture, fold in the apple pieces, season to taste with cinnamon, and finally, fold in the egg-sugar mixture with a large whisk. The batter is now ready for the waffle iron. Also delicious: Use Ostmann’s Apple Pie Spice instead of cinnamon.
