Apple-mascarpone layered cream

Ingredients for 5 servings:

  • 1 ½ kg apples
  • 2 stalk(s) cinnamon
  • 1 piece(s) lemon peel
  • 5 tbsp lemon juice
  • 1 vanilla pod(s)
  • 90 g sugar
  • 250 g mascarpone
  • 150 g yogurt (vanilla)
  • 40 g biscuits (amarettini)
  • 4 tbsp water

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

with homemade applesauce

Peel, quarter, core, and slice the apples. Combine the cinnamon sticks, lemon zest, 4 tablespoons of lemon juice, water, scraped vanilla seeds and pod, and 60g of sugar. Cover and bring to a boil. Simmer over medium heat for about 10 minutes. Set aside a few apple pieces and pass the rest through a sieve. Mix the pieces back in, sweeten to taste, and let cool. Mix together the mascarpone, yogurt, remaining lemon juice, and sugar. Roughly crush the amaretti biscuits (preferably soft ones) and layer them with the applesauce and cream in a bowl.
