Ingredients for 1 servings:

  • 2 large apples
  • 210 g sugar
  • 1 tsp cinnamon powder
  • 280 g flour
  • 1 ½ tsp baking soda
  • ½ tsp salt
  • 100 g butter
  • 1 egg(s)
  • 250 g buttermilk
  • 1 packet of Bourbon vanilla sugar

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

prepared in the Thermomix, makes 12 muffins

Peel the apples, remove the cores, and quarter them. Chop them with 2 tablespoons of sugar and 1/2 teaspoon of cinnamon in the Thermomix for 5 seconds on speed 5, then transfer to a bowl. Briefly rinse the Thermomix. Melt the butter for 3 minutes at 60°C on speed 1. Add 100g of sugar, buttermilk, egg, and vanilla sugar, and mix for 20 seconds on speed 4. Add the flour, baking soda, and salt, and mix for another 20 seconds on speed 4. Now add the apple mixture and stir briefly. Divide the batter among muffin cases. Depending on the size of the cases, you may need more than 12. Last time I made 17. Mix 2 tablespoons of sugar with 1/2 teaspoon of cinnamon and spread over the muffins. Bake at 170°C (convection oven) for about 20 minutes.
