Apple pancake with strawberry sauce

Ingredients for 4 servings:

  • 300 g apples, sour
  • 200 g flour
  • 250 ml milk
  • Salt
  • 2 tbsp oil
  • 2 tbsp sugar
  • 4 egg yolks
  • 4 egg whites
  • 1 sachet of lemon flavor (Citroback)
  • Fat for frying, e.g. sesame oil
  • 1 bottle of sauce (strawberry sauce)
  • 200 ml whipped cream

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Peel and coarsely grate the apples. Whisk together the milk, oil, flour, sugar, a pinch of salt, and the egg yolks to form a smooth batter. Fold in the apples and the Citroback. Beat the egg whites until stiff and carefully fold into the batter. Heat the fat in a pan. Pour in a large ladleful of batter and fry over moderate heat until light brown on both sides. Then tear it apart with two forks and keep warm. Bake the remaining apple pancake until the batter is used up. Whip the cream until stiff and serve the pancake with strawberry sauce and cream.
