Apple pancakes

Ingredients for 2 servings:

  • 2 eggs
  • 125 g flour
  • 1 pinch of salt
  • 200 ml milk
  • 100 ml mineral water
  • 3 tbsp oil
  • 1 apple (200g)
  • 2 tbsp sugar
  • ½ tsp cinnamon powder

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Crack the eggs over a mug and add them to the mixing bowl. Beat with an electric hand mixer until frothy. Stir in the flour a spoonful at a time. Add the salt and slowly add the milk while stirring. Stir until a smooth batter forms. Let it sit for 5 minutes, then pour in the seltzer water and stir the batter again. Peel and core the apple and cut it into very thin slices. Place the pan on the stove, add 1 tablespoon of oil and heat. Pour a little batter into the pan and smooth it out, then press a few apple slices into the soft batter. Fry both sides until light brown. Continue in this process until all the batter and apple slices are used up, adding a little oil as you fry. Sprinkle the apple pancakes with sugar and cinnamon to serve.
