Apple spaetzle with cranberries

Ingredients for 2 servings:

  • 190 g flour
  • some salt
  • 2 eggs
  • 80 ml water
  • 2 tbsp oil
  • 600 g apples, peeled and cut into small pieces
  • 50 g butter
  • 30 g cranberries
  • 1 tbsp sugar
  • 1 tsp cinnamon
  • 1 tsp lemon juice
  • powdered sugar

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Mix all five dough ingredients thoroughly (add a little more water if necessary; the dough should be loose). Using a spaetzle grater, add the spaetzle to the boiling water and bring to a boil briefly. Drain the cooked spaetzle, rinse, and drain well, then mix with the cooked apples and sprinkle with powdered sugar. Apple preparation: Heat the butter in a non-stick pan, lightly fry the apples on all sides, add the sugar, and stir until lightly caramelized. After about 2 minutes, add the cinnamon, lemon juice, and cranberries. Sweeten to taste.
