Apple pancakes

Ingredients for 2 servings:

  • 2 eggs
  • 2 tbsp sugar
  • 200 ml milk
  • 120 g flour
  • 1 pinch of baking powder
  • 1 pinch of salt
  • 2 apples
  • 1 tbsp butter
  • 1 tbsp sugar
  • 2 cl Calvados or apple liqueur

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Separate the eggs. Beat the egg whites until stiff. Beat the egg yolks with 2 tablespoons of sugar until creamy and add the milk. Now add the flour, baking powder, and a pinch of salt, mix, and finally fold in the beaten egg whites. Peel, quarter, and core the apples, then slice or cut into pieces. Caramelize them slightly in a pan with 1 tablespoon of butter and 1 tablespoon of sugar. Deglaze with Calvados and pour in the batter. Let the batter set and bake in a preheated oven at 160°C for about 10 minutes until golden brown. Try the other two recipes from our video: “Pancake with Blueberries” and “Crêpe.”
