Apple pancakes with maple syrup

Ingredients for 6 servings:

  • 125 g flour (whole wheat flour)
  • 3 eggs
  • 200 ml milk
  • 2 tbsp sugar, brown (alternatively white sugar)
  • 1 packet of vanilla sugar
  • ½ tsp cinnamon
  • 4 apples
  • 1 lemon(s), juice
  • 2 tbsp sesame seeds
  • 4 tbsp syrup (maple syrup)
  • Fat, for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Mix the first six ingredients together. Peel the apples, cut them into eighths, and slice them thinly (I do this using a cucumber grater). Drizzle with lemon juice. Add the apples to the batter and mix well. Heat some fat in a small pan, spoon a few at a time into the pan, and sprinkle with sesame seeds. After baking, drizzle with syrup. I personally don’t drizzle the apples with lemon juice, as I slice them straight into the batter. If you don’t like maple syrup, you can also use cinnamon/sugar or applesauce. The pancakes also taste great on their own.
