Ingredients for 2 servings:
- 150 g flour
- 2 eggs
- 0.38 liters of milk
- 1 tbsp butter, liquid
- 2 apples (Boskop)
- 1 vanilla pod(s)
- 2 egg yolks
- 1 tbsp sweet cream
- 1 pinch of salt
- 4 tbsp sugar (more or less to taste)
- 2 tbsp clarified butter (for frying)

For the pancake batter, mix together the flour, eggs, 1/8 liter of milk, and a pinch of salt, then stir in the melted butter. Peel and quarter the apples, remove the cores, and thinly slice the apple quarters. Sauté a few apple slices in a pan with a little clarified butter and sprinkle with the sugar. Let the sugar caramelize slightly, then pour on some pancake batter, ensuring everything is well covered. Cook the pancake on both sides, remove from the pan, and keep warm in the oven (at about 80 degrees Celsius). Gradually cook the remaining pancakes. For the vanilla sauce, scrape out the vanilla seeds and bring them to a boil with 2 tablespoons of sugar and 1/4 liter of milk, then simmer for a few minutes. Then remove the pan from the heat and remove the pod. Whisk the egg yolks with the cream and stir into the hot milk. Stir occasionally while cooling to prevent a skin from forming. Serve the pancakes with the vanilla sauce.
