Ingredients for 1 servings:

  • 225 g flour
  • 140 g butter
  • 85 g sugar
  • 1 pinch of salt
  • 2 egg yolks
  • 1 lemon(s), untreated, zest
  • 6 apples
  • 1 egg yolk
  • some water

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes

Mix the flour, butter, sugar, lemon zest (or a packet of Citroback), salt, and egg yolks together and knead into a dough. Peel and slice the apples, boil them in a saucepan with a little sugar and water for 5 minutes (crush them a little more if you like), then let the mixture cool. Divide the dough into two pieces. Roll out the larger piece and line the baking dish (approx. 20 cm in diameter) with it. Spread the cooled mixture over the dough. Roll out the rest of the dough and place it on top of the apple mixture. Press down the sides. Brush the whole thing with egg yolk (mixed with a little water). Bake in a preheated oven at 180°C for 45–50 minutes. Best enjoyed while still warm.
