Ingredients for 1 servings:

  • 250 g flour
  • 175 g butter
  • 1 pinch of salt
  • 6 tbsp water, ice-cold (important)
  • 1 kg apples, crumbly (e.g. Boskop), cut into wedges
  • 1 packet of vanilla sugar
  • 2 tbsp sugar (heaped tbsp)
  • 2 pinches of ginger powder
  • 3 pinches of cinnamon
  • 3 tbsp lemon juice
  • 2 tsp cornstarch (heaped tsp)
  • 2 tbsp jam (apricot), heated
  • 125 g powdered sugar
  • Fat for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Apple pie in a glass dish

Knead the flour, butter, and salt with a fork until crumbly. Mix in the ice water and knead briefly. Roll out two sheets between a cut-open freezer bag—one smaller and one larger. Line a greased pie dish with the larger sheet of dough and pierce it several times with a fork. Mix the apple slices with the lemon juice, cinnamon, ginger powder, sugar, vanilla sugar, and cornstarch. Fill the pastry base with the dough. Place the smaller sheet of dough on top and press down firmly. Bake the apple pie in a preheated oven at 200°C (top/bottom heat: 160°C) for about 35 minutes. Brush with heated apricot jam while it is still hot, and glaze with powdered sugar once it has cooled. Tips: You can also serve it with vanilla sauce. Vanilla ice cream also goes very well with it.
