- 100 g sugar
- 2 tbsp vanilla sugar
- 1 pinch of salt
- 2 eggs
- 100 g flour
- 50 g starch flour
- 1 tsp baking powder
- Fat for the mold
- 750 g apples
- 150 g crème fraîche
- 2 eggs
- 50 g sugar
- powdered sugar if needed
- possibly cinnamon if needed
Instructions
Working time approx. 45 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 45 minutes
Cream the butter with sugar, vanilla sugar, and salt until fluffy, then beat in 2 eggs one at a time (better beat for longer than too short to ensure the batter is nice and moist). Then just briefly beat in the flour mixed with the baking powder and cornstarch. Core the washed apples. Peel the apples whole and then cut them into rings about 1/2 cm wide. Preheat the oven to 180°C (top/bottom heat). Grease a 28 cm springform pan and pour in the batter, lightly pressing the apple rings onto the batter in a wreath shape. Bake in the oven on the bottom rack for about 35 minutes. Mix the crème fraîche with the remaining 2 eggs and 50 g of sugar. Pour the cream glaze over the pre-baked apple pie and bake in the hot oven on the middle rack for another 25 minutes. Once the pie has cooled, you can dust it with powdered sugar. If you like, sprinkle some cinnamon over the apples before baking for the first time. Another tip: As with any batter, you should have the ingredients at roughly the same temperature, so take the margarine and eggs out of the refrigerator earlier for the batter.
