Apple rusk casserole with snow

Ingredients for 4 servings:

  • 6 pieces of rusk (wholemeal)
  • 500 g apples or fruit of your choice
  • 500 ml milk
  • 3 egg yolks
  • 1 tbsp honey
  • 1 pinch of salt
  • 3 egg whites
  • 3 tbsp honey or raspberry jam
  • Butter, for the casserole dish
  • possibly cane sugar
  • possibly lemon juice, for fruit

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Fruit casserole suitable as a main course or dessert

Wash, core, eighth, and slice the apples. Sprinkle with sugar and drizzle with a little lemon juice. Butter a baking dish well and line the bottom with rusks. Place the sugared fruit on top. Whisk the egg yolks, honey, salt, and milk well and pour over the mixture. Bake the casserole in a preheated oven at 170°C (top/bottom heat) for 25-30 minutes. Beat the egg whites with the honey or raspberry jam until stiff. (If you like it very sweet, you can add more sugar). Spread the meringue mixture on top and bake the casserole for another 20 minutes. This recipe is intended as a main course; as a dessert, it serves 6 people.
