Apple Sesame Rice Cake

Ingredients for 1 servings:

  • 1,400 g applesauce
  • Grind 3 cup(s) sesame seeds, unpeeled = 140 g each
  • 120 g raw cane sugar
  • 1 pinch of salt
  • 180 g rice (grind whole grain rice) = 1 cup

Instructions

Working time approx. 1 hour 30 minutes; Cooking/baking time approx. 1 hour 40 minutes; Total time approx. 3 hours 10 minutes

Place applesauce in a deep mixing bowl, lightly toast the sesame seeds and grind them with the whole-grain rice. Season with sugar and salt, mix well, pour into a 26 cm ring pan lined with baking paper, shake or smooth it out. Place in a cold oven and bake at approximately 150°C for approximately 90-100 minutes*, using a needle test. Even after cooling, let stand for a while; the whole-grain rice needs time to set. Cooking time: approximately 70-90 minutes, depending on how long the sesame seeds need to grind. Since I baked several cakes and breads at the same time, the baking time was a bit longer.
