Apple slices and plums in batter

Ingredients for 4 servings:

  • 140 g flour, smooth
  • 62 ½ ml milk
  • 62 ½ ml mineral water (soda)
  • 1 pinch of salt
  • 2 eggs, separated
  • 10 g powdered sugar (icing sugar)
  • 1 tbsp sugar
  • 1 tbsp rum
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • 300 g apples
  • 200 g plums
  • Oil for frying
  • n. B. cinnamon for sprinkling
  • n. B. Sugar for sprinkling

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

as a main course or dessert

Quickly mix the flour, milk, mineral water, salt, and egg yolks into a batter, then let it rest for a while. Beat the egg whites with icing sugar until stiff peaks form and fold into the batter. Peel the apples, core them, and cut into approximately 8 mm thick rings. Wash, halve, and stone the plums. Sprinkle with rum, lemon juice, sugar, and cinnamon, then mix well. Dip the fruit into the batter and fry in batches, floating in oil. Drain on kitchen paper. Sprinkle with a mixture of cinnamon and sugar, and serve. Serve with vanilla ice cream.
