Ingredients for 1 servings:
- 200 g wheat flour type 405
- 1 packet of baking powder
- 3 eggs
- 1 packet of vanilla sugar
- 150 g sugar
- 140 ml oil
- 65 ml milk
- 1 shot of rum
- 1 tsp cinnamon powder
- 8 speculatius cookies
- 2 apples

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
for 14 muffins
First, sift the flour and baking powder into a bowl. Then add the remaining ingredients, except for the apples and biscuits, and mix everything well. I use a mixer, but a large spoon will do, too. Peel the apples and cut them into small pieces. Crumble the speculatius biscuits into a freezer bag. Then briefly fold everything into the batter. Line a muffin tin with baking cups and fill with the batter. I always use 2 tablespoons; it works well. Bake the muffins in a preheated oven at 180°C (top/bottom heat) for 20-25 minutes. This makes about 14 muffins.
