Ingredients for 20 servings:
- 2 eggs
- 50 g butter (half-fat butter)
- 180 g Flour (wholemeal spelled flour)
- 1 tbsp baking powder
- 1 tsp baking soda
- 50 g brown sugar
- 20 g vanilla sugar
- 1 tbsp cinnamon
- 1 lemon(s) – peel, grated and juice
- 2 apples
- 50 g yogurt, 0.1% fat

Cut the apples into very small cubes and pour over the lemon juice. Beat the eggs and butter until fluffy. Add the yogurt while stirring. Mix the flour, baking powder, baking soda, brown sugar, vanilla sugar, cinnamon and lemon zest together in a separate bowl. Carefully stir the flour mixture into the egg mixture a spoonful at a time (do not stir for too long, otherwise the batter will become tough). Finally, fold the apple and lemon mixture into the batter. Divide the batter into muffin tins and bake at approx. 170°C (convection oven) on the middle rack for approx. 15-20 minutes.
