Ingredients for 1 servings:
- 200 g flour
- 50 g semolina
- 1 pinch of salt
- 1 egg yolk
- 50 g margarine
- 6 tbsp sour cream
- 4 tbsp water, lukewarm
- 750 g apples, peeled and sliced
- 100 g sugar
- 30 g almond(s), chopped
- 50 g sultanas or raisins
- 1 pinch(s) cinnamon powder
- 1 tbsp brandy
- some liquid margarine for spreading, or 1 egg
- 50 g butter, melted
- some breadcrumbs
- some powdered sugar for dusting
Instructions
Working time approx. 50 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 45 minutes
Sift flour and semolina onto a baking board. In the center, add salt, egg yolk, melted (but not too hot) margarine, sour cream, and lukewarm water. Knead the ingredients and hit the dough several times on the baking board to make it smooth. Form a ball, spread a thin layer of melted margarine, place a bowl over it, and place a pot of hot water on top. Let the strudel dough rest for at least 30 minutes. Roll out paper-thin on a floured cloth, brush with about 50g melted butter, and sprinkle with breadcrumbs. Mix together the prepared apples, sugar, chopped almonds, washed sultanas, cinnamon, and brandy, and spread over the strudel dough. Do not spread the filling all the way to the edges, as otherwise the dough will not hold together well. Using the cloth, roll up the dough and place it on a greased baking sheet. Brush with a little melted margarine or beaten egg and bake in a preheated oven at medium heat (approx. 225°C) for about 25 minutes until golden brown. Then immediately dust with powdered sugar.
