Ingredients for 1 servings:

  • 350 g flour
  • 300 g sugar
  • ½ pack of baking powder
  • 2 packets of vanilla sugar
  • 750 g quark, well drained
  • 100 g raisins
  • 350 g apples
  • 250 ml milk
  • 250 ml cream
  • 3 eggs
  • Lemon(s) – zest, grated
  • butter

Mix the flour, sugar, baking powder, and vanilla sugar and pour half of the mixture into a large baking dish. Spread the quark over the top, then add the raisins and finely chopped apples. Spread the remaining flour mixture over the top. Mix the milk, eggs, cream, and lemon zest and pour over the cake. Leave to soak overnight. The next day, sprinkle knobs of butter on the surface and bake in a preheated oven at 200°C for about 30-45 minutes. You can use other fruit instead of apples, such as cherries or tangerines. This recipe is great to prepare the day before and is perfect as a cake with coffee or as a dessert. Note: It is important not to stir the batter, but to stack the layers on top of each other. The quark and the milk-egg mixture will release enough moisture during the soaking to create a delicious dough strudel after baking.
