Ingredients for 12 servings:
- 130 g flour
- 150 g ground almonds
- 50 g almonds, chopped
- 2 tbsp almonds, sliced, for garnishing
- 150 g date(s), chopped
- 3 tsp baking powder
- 125 g butter
- 150 g sugar, brown
- 4 eggs
- 100 ml Amaretto
Instructions

Preheat oven to 180°C and press paper muffin cups into the muffin tin, or grease the tin thoroughly. Sift the flour and baking powder together with the almonds and dates in a bowl. In a second bowl, cream the butter, sugar, eggs, and Amaretto until light and fluffy, then add to the flour mixture and stir in (lumps are allowed!). Pour the batter into the muffin cups, sprinkle with slivered almonds, and bake for about 20-25 minutes. Let cool for 10 minutes, then remove from the muffin tin using a tea towel. These muffins are very moist and taste almost better the next day. They also freeze well and thaw in the oven when needed!
