My favorite apple pie, for 6 slices

Knead the flour with the almonds, butter, sugar, egg yolk, and cream into a smooth dough. Wrap in cling film and chill for 30 minutes. Roll out the dough thinly between the baking paper and the cling film and place it on a baking sheet with the baking paper (but without the film). Put the sour cream in a bowl. Separate the egg and add the egg yolk. Beat the egg whites with the sugar until stiff. Mix them with the hazelnuts into the sour cream. Then spread it over the dough. Preheat the oven to 180 degrees Celsius. Peel the apples, remove the cores using a corer, and slice them. Arrange the apple slices in a flake-like pattern on the cake. Bake in the oven for about 30 minutes. Melt the butter, mix with the honey, and spread the mixture over the apples. Then bake for another 10 minutes. Cut the cake into slices and serve with whipped cream.
