  • 2 tbsp sugar
  • 1 cube of fresh yeast
  • 150 ml milk
  • 2 eggs
  • 1 pinch of salt
  • 80 g butter or margarine, soft
  • 500 g apples, sour
  • 1 tsp cinnamon
  • 50 g sugar
  • 100 g walnuts, coarsely chopped
  • 2 egg yolks for brushing
  • Powdered sugar for sprinkling

Instructions

Working time approx. 45 minutes; Rest time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 50 minutes

for 6 – 8 pieces

For the dough, put the flour in a mixing bowl, make a well in the middle, add the sugar and yeast, pour in the lukewarm milk, cover with a little flour and let it rise in a warm place for about 10-15 minutes. For the filling, peel the apples, remove the cores and grate the pieces. Then add the other ingredients, knead and let it rise for another 30 minutes. Meanwhile, add the cinnamon and sugar to the grated apples and bring to the boil in a saucepan for about 10 minutes. Let it cool and add the chopped walnuts. After the resting time, form the dough into balls and roll them out into ovals. Make a slit in the middle of one side with a pizza cutter and add the apple filling to the other side, fold it over and press the sides down firmly. Brush the apple turnovers with egg yolk and bake at 180°C (top/bottom heat) for 20 minutes, then sprinkle with plenty of powdered sugar.
