Apple Yeast Wreath

The perfect apple yeast wreath recipe with a picture and simple step-by-step instructions.

  • 500 g Sifted flour
  • 75 g Sugar
  • 2,5 dl Milk
  • 1 dice Yeast or 11 gr. Dry yeast
  • 50 g Soft butter
  • 1 Pc. Chicken egg yolk fresh
  • 1 pinch Salt
  • Filling
  • 1 kg Tart apples
  • 1 Pc. Lemon
  • 25 g Butter
  • 25 g Sugar
  • 150 g Almond sticks
  • 1 Pc. Cinnamon stick
  • 2 Pc. Star anise
  • 3 tbsp Sultanas pickled in rum
  • Apricot jam
  1. Mix the flour and sugar together and make a well in the middle of a little lukewarm milk and crumble the yeast into it, cover with a little flour and pour in the rest of the milk at the edge.
  2. Mix the dry yeast directly with the flour and sugar and add the milk
  3. 2. Add the butter flakes and the egg yolk and knead everything well to form a smooth dough.
  4. 3. Let the dough rise until it is twice as big.
  5. 4. Filling, peel the apples, quarter them and remove the core, then cut the apples into slices. Drizzle with lemon juice and add the zest. Instead of lemon juice, 4 tablespoons of CALVADOS can be used
  6. 5. Melt the butter in a pan, add the star anise, cinnamon and the apples, sprinkle with the sugar and simmer, stirring occasionally, until the liquid has boiled down completely.
  7. 6. Let the mixture cool down and add the almond sticks
  8. 7. The dough about 45 cm. Roll out the dough long and 30 cm wide, spread the apple mixture over it, leave a 2 cm edge, then turn the whole dough into a roll. Carefully turn the roll itself 4-5 times and pour it into the well-greased and floured form.
  9. 8. Preheat the oven to 180 degrees
  10. 9. Let the wreath rise for another 1/4 hour.
  11. 10 Bake the yeast wreath for about 60 minutes and then let it rest in the oven for 15 minutes. In the meantime, heat the jam to brush and press it through a sieve
  12. 11/12 Brush the warm cake with the jam and sprinkle with flaked almonds
  13. For the look, a roll can be made with two rectangles 45×20 cm and these can be interwoven. It is important that a 1cm deep cut is made in the middle of the rolls before the rolls are braided, pull the strands a little longer while braiding, then shape them into a wreath.
