- 200 g butter
- 200 g quark (cottage cheese)
- 200 g flour
- 200 g applesauce, sugar-free, preferably homemade
- Flour for the work surface

Knead the curd cheese, softened butter, and flour into a dough and chill. Roll out the dough on a floured surface to a thin thickness of 3-5 mm, depending on your preference. Use enough flour and work the dough while cold so that it doesn’t stick. Cut the dough into small squares; 5 x 5 to 8 x 8 cm is ideal for small hands. Place a small dollop of jam in the center of each square, 1/2-1 teaspoon depending on the size. Then fold the squares into triangles and press down the edges to prevent leakage. If there is any jam left over, you can add it for dipping or just eat it straight away. Bake at 180 degrees Celsius for 15 minutes. They will be quite soft when warm, but will firm up later. For older children and parents, you can also use jam for the filling and sprinkle with powdered sugar. Frozen berries are also a sugar-free option for babies. We always make a large batch of the jam at the end of summer, when the apples in all the gardens ripen and we have leftovers. We then freeze it in silicone muffin cups. Once frozen, we press everything into plastic bags, and we always have delicious, unsweetened jam.
