Ingredients for 1 servings:

  • 8 m.-sized apples (sweet and sour, e.g. Mc Intosh), peeled, pitted and quartered
  • 480 ml apple juice (no added sugar)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Roasted Apple Butter, suitable for diabetics

Preheat oven to 230°C. Place the apples in the roasting pan and pour over the juice. Bake in the oven for approximately 30 minutes, until the apples have turned a light brown color and are tender when pierced. Remove the roasting pan and mash the apples thoroughly with a fork (leave them in the roasting pan). Reduce oven temperature to 175°C. Cook the apple puree for another 1.5 to 1.5 hours, until the mixture has thickened and turned dark brown. Stir the apple sauce occasionally during cooking. When ready, transfer to a bowl to cool. Store in a screw-top jar in the refrigerator for up to 2 weeks, but for long-term storage, please store in a freezer container for up to 6 months. Makes 480 ml (1 serving is 1 tbsp). 27 kcal, 0 g fat, 7 g carbohydrates, 0 g protein.
