Ingredients for 4 servings:
- 2 tbsp lemon juice
- 2 tbsp extra-virgin olive oil
- 1 small garlic clove(s), finely chopped
- salt and pepper
- 4 medium-sized carrots, grated
- 3 tbsp fresh dill, chopped
- 2 tbsp spring onions, chopped

Prepare the marinade: Whisk together lemon juice, oil, garlic, salt, and pepper in a medium bowl. Lightly stir in the remaining ingredients. Refrigerate for up to 2 days. Also delicious as a side dish for a tuna sandwich! Per serving: 90 kcal, 7 g fat, 6 g carbohydrates, 1 g protein.
