Apricot and bacon rolls

Ingredients for 4 servings:

  • 24 apricot(s), dried
  • 12 slices of bacon
  • 3 chili peppers, dried
  • oil
  • pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Bring 250 ml of water to a boil and pour into a bowl. Crumble the chili peppers into the hot water. (Either wear gloves or wash your hands thoroughly and DO NOT touch your eyes for the next few hours!) Add the apricots and let them soak overnight or for at least 2 hours. Remove from the heat and dry thoroughly. Halve the bacon and wrap a piece around each apricot, securing it with a toothpick. Season the rolls with pepper. Brush a pan with oil and fry the rolls over medium heat until crispy. Serve once cooled. Delicious with beer or on a cold buffet. Enjoy!
