Ingredients for 16 servings:
- 1 class can/n pineapple slice(s) (236 ml)
- 2 tbsp white rum
- 8 slices of breakfast bacon
- 2 tbsp salsa
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
You will also need 16 wooden skewers. Drain the pineapple. Cut each slice into 4 pieces. Marinate in rum for about 30 minutes. Preheat oven to 240°C (top/bottom heat). Halve the bacon. Spread the bacon slices with salsa. Place a pineapple piece on each slice and fold the bacon slice over. Brush the outside of the pineapple parcels with the remaining salsa. Place on a baking sheet lined with parchment paper and bake in the hot oven for about 15 minutes, until crispy brown. Thread the skewers onto the pineapple parcels. Variation: After marinating, roll the pineapple parcels in coconut flakes. 109 kcal per serving
