Apricot appetizer

Ingredients for 4 servings:

  • 750 g apricot(s)
  • 2 tbsp honey
  • 4 tbsp Marsala
  • 1 tbsp white wine
  • ½ tbsp vinegar
  • 2 tbsp mint, chopped
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 tsp cornstarch
  • some pepper and mint for garnishing

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Gustum de praecoquiis

Cut the apricots into small pieces. Bring the honey, Marsala, wine, vinegar, mint, salt, and pepper to a boil in a saucepan. Add the apricots and simmer for 10 minutes. Thicken the appetizer with the cornstarch and sprinkle with pepper. Garnish with mint leaves.
