Ingredients for 1 servings:

  • 150 g butter or margarine
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 2 eggs
  • 50 g almonds, ground
  • 200 g flour
  • 1 tsp baking powder
  • 10 apricots
  • 1 lemon(s), juice
  • e.g. powdered sugar for dusting or sugar/chocolate icing

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Mix the butter, sugar, vanilla sugar, eggs, ground almonds, flour, and baking powder well together, adding lemon juice if desired. Pit the apricots, dice them, and fold them in. Preparation in the Thermomix: Place all ingredients except the apricots in the Thermomix. Mix on the dough setting for about 1 minute. Pit the apricots, add them to the batter, and mix for another minute. This breaks up the apricots a little and helps them distribute themselves better in the batter. The cake will be beautifully moist. Pour the batter into a greased loaf pan and bake in a preheated oven at 180°C (top/bottom heat) for about 45 minutes on the middle rack. Dust with powdered sugar or cover with sugar or chocolate icing.
