Apricot curry

Ingredients for 2 servings:

  • 300 g poultry meat (turkey or chicken), cut into strips
  • 2 tbsp oil
  • 1 small onion(s), finely diced
  • 1 large garlic clove(s), peeled and diced
  • 1 jar apricot(s), cut into pieces
  • Salt
  • pepper
  • little spice mix (Ras el Hanout)
  • ¼ liter chicken stock or broth
  • some cornstarch or locust bean gum, mixed with a little water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Brown the meat in oil, remove it from the pan, and season generously with pepper, ras el hanout, and salt. Sauté the diced onion and garlic in the remaining fat and add the apricots. Now add the broth or stock and let it simmer for a while. Stir in the cornstarch, depending on the thickness, and heat the meat. We like this with potatoes or pasta.
