Ingredients for 1 servings:

  • 100 g butter
  • 200 g oat flakes, wholegrain
  • 200 g apricot(s), dried
  • 2 small eggs
  • 80 g sugar
  • 1 packet of vanilla sugar
  • ½ tsp baking powder

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Melt the butter in a pan, stir in the oats, and then let cool. Dice the apricots. Beat the egg, sugar, and bourbon vanilla sugar until creamy. Add the baking powder, apricots, and oats and mix well. Place two teaspoonfuls of the cookies onto a baking sheet lined with parchment paper. Bake the cookies in a preheated oven at 175°C for about 12-15 minutes. Sprinkle with powdered sugar, if desired. Based on a batch of about 55 cookies, this yields approximately 47 kcal and 2 g of fat per cookie.
