Ingredients for 12 servings:

  • 200 g apricot(s), dried
  • 60 ml boiling water
  • 250 g flour (preferably wholemeal flour)
  • 2 tsp baking powder
  • 40 g oil, neutral
  • 180 g sugar, brown
  • 2 m.-sized eggs
  • 120 ml milk
  • 1 tsp orange peel, grated
  • Gingerbread spice, anise, cardamom, cinnamon – as desired

Christmassy, ​​fruity and moist muffins

Preheat oven to 190°C and grease muffin tins. Finely chop the apricots and let them soak in boiling water for about 15 minutes. Mix the flour and baking powder in a bowl. In a second bowl, beat the oil, sugar, eggs, and milk with the flavoring until frothy. Add the flour mixture and apricots and stir in. Pour the batter into the muffin tins and bake for about 20-25 minutes.
