Apricot mustard

Ingredients for 4 servings:

  • 400 g apricot(s), (soft)
  • 250 ml orange juice
  • 150 ml white wine vinegar
  • 100 g mustard seeds
  • 100 g gelling sugar, 2:1

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Delicious with cheese

Soak apricots in orange juice and mustard seeds in white wine vinegar for at least 10 minutes. Chop the apricots in two batches in a food processor. Mix all ingredients, except the soaked mustard seeds, with the gelling sugar and transfer to a microwave-safe container (e.g., a Tupperware Microplus jug or a rice cooker). Microwave at 600 W for 10 minutes until set, stirring occasionally. Finally, stir in the mustard seeds. Transfer the apricot mustard to a tightly sealed container. For a milder mustard, cook some of the mustard seeds with the mixture.
