Ingredients for 1 servings:

  • 400 g flour
  • 120 g sugar
  • 1 pinch of salt
  • 1 lemon(s), grated peel
  • 1 packet of vanilla sugar
  • 1 egg yolk
  • 2 tbsp rum or brandy
  • 250 g butter
  • 2 tbsp powdered sugar
  • Jam (apricot jam)
  • Flour for the work surface
  • Grease for the tray

Instructions

Working time approx. 35 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 35 minutes

Sift flour onto a board. Add sugar, salt, lemon zest, vanilla sugar, egg yolk, rum or brandy, and butter flakes. Chop everything together with a large knife. Quickly knead into a smooth dough, cover, and chill for 2 hours. Roll out the dough on a lightly floured surface to a thickness of 3 mm. Cut out even-sized circles and cookies and bake on a greased baking sheet at a moderate temperature (180 degrees Celsius) for about 8 to 10 minutes until golden brown. Sprinkle the circles with powdered sugar. Spread the cookies with warm apricot jam and place the circles on top.
