Ingredients for 15 servings:

  • 400 g flour
  • 120 g sugar
  • 1 pinch of salt
  • 1 egg(s), including the yolk
  • 2 tbsp orange liqueur
  • 1 lemon(s), zest, grated
  • 250 g butter, cold
  • Flour, for rolling out
  • powdered sugar
  • 250 g apricot jam or marmalade

Instructions

Working time approx. 1 hour; Rest time approx. 2 hours; Total time approx. 3 hours

Combine flour, sugar, and salt, and make a well in the center. Add the egg yolk with the liqueur and lemon zest, then place the butter in small pieces around the edge. Knead everything together and refrigerate for 2 hours, wrapped in foil. Roll out thinly on a floured surface and cut out equal portions of round discs and rings. Bake on baking sheets lined with baking paper at 180°C until golden brown. Once cooled, fill with the slightly warmed jam and sprinkle with powdered sugar.
