Classic Christmas biscuits, makes about 30 pieces

Make a shortcrust pastry with flour, butter, sugar, egg yolk, and flavorings. Let the dough rest in the refrigerator for 2 hours. Briefly knead the shortcrust pastry and roll it out thinly. Cut out rings and bases (approx. 4 cm in diameter) and place them on baking paper. Do not place the bases and rings on the same baking sheet because they will take different baking times. Bake at approximately 150°C until golden brown. Dust the rings with powdered sugar and place them on the jam-covered bases. Store the apricot rings in a tin. Another quick tip: The shortcrust pastry for Christmas baking can be made the day before the big baking day. This way, you can use the oven more cost-effectively. (Vanilla croissants, apricot rings, Spitzbuben, butter shortbread, etc.).
