Apricot roast beef skewers

Ingredients for 5 servings:

  • 400 g roast beef, with fat edge
  • 2 tbsp olive oil
  • 2 glasses of dry red wine
  • 1 shot of juice (cherry)
  • ½ tsp pepper, mixed
  • ½ tsp pepper berries, pink, pink
  • 1 tbsp thyme, chopped
  • 4 apricots
  • 2 tbsp honey

Instructions

Working time approx. 25 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 10 minutes; Total time approx. 8 hours 35 minutes

Pour the red wine into a saucepan and reduce by about half on the stove. Then add a dash of cherry juice and let it reduce a little further. In the meantime, cut the roast beef into 2 slices about a finger thick, then cut each slice into 5 equal pieces and place in a bag or bowl. Roughly grind the pepper in a mortar, add the thyme and salt and mix the mixture well. Cut the apricots in half, remove the stones, quarter them and also place them in a bag. Let the reduction cool completely, take 2 tablespoons, mix with the honey and add to the fruit and distribute well. Seal the bag and let it sit overnight. Mix the remaining reduction with the oil and the spice mix, pour over the pieces of meat and distribute well. Seal the bag and let it sit overnight. Before grilling, put 2 pieces of meat and 3 pieces of fruit on previously soaked skewers and grill.
