The perfect apricot schnitzel >> recipe with a picture and simple step-by-step instructions.

  • 2 Pc. Minute schnitzel
  • 0,125 liter Vegetable broth
  • 100 g Dried apricots
  • 1 Shallot
  • 1 Clove of garlic
  • 1 tbsp Butter
  • 2 tbsp Apricot jam
  • 1 tbsp Soy sauce
  • Salt and pepper
  • Lemon juice
  • 1 tbsp Olive oil
  1. Wash the meat and pat dry. Bring the vegetable stock to the boil, add the apricots and steep or swell for about 15 minutes. Finely dice shallot.
  2. Heat the butter and fry the shallot until translucent. Squeeze the garlic. Now add the apricot jam and the soaking stock, bring to the boil. Halve the apricots. Season the stock with salt, pepper, soy sauce and lemon juice and reduce until thick. Then add the apricots and heat.
  3. Heat the oil in a pan and fry the minute schnitzel on both sides. Then salt and pepper. Spread the apricot sauce on top and let it steep for about 5 minutes over low heat. Serve with rice. ENJOY YOUR MEAL!
